1 cucumber
2 tbsp fresh lime juice
2 tbsp extra virgin olive oil
1 garlic clove
1/2 tsp honey
1/4 tsp salt
1/2 tsp black pepper
4 cup kale — or mixed greens, chopped
2 Zespri™ Vita Green Kiwifruit — peeled and chopped
3/4 cup edamame beans
1/3 cup pistachios — shelled and salted


Cut cucumber in half lengthwise and deseed. Place cucumber seeds in a food processor or blender.

Add lime juice, olive oil, garlic, honey, salt and pepper. Process until well blended.

In a large bowl, massage half the cucumber-lime dressing into the kale until the leaves are coated and the kale has darkened a bit in colour. (If using mixed greens, omit this step.)

Slice seeded cucumber and toss cucumber, kiwifruit, edamame beans and pistachios with kale and remaining dressing.

Serve immediately.
