500 g lamb mince
1 onion — finely chopped
2 garlic cloves — crushed
1 red bell pepper — finely chopped
125 g red pepper pesto
salt and black pepper
150 g linguine
parmesan cheese — to serve
fresh basil — to serve


Heat a deep, wide frying pan. Fry the onion and garlic in the olive oil until soft and lightly golden.

Add the lamb mince and brown. Stir in the peppers, red pepper pesto and 1 tbsp  of water and simmer for 10 minutes, stirring occasionally.

Meanwhile, cook the linguine pasta according to the packet instructions. Mix into the meaty red pepper sauce.

Serve with fresh basil and parmesan cheese.
