A quick and warming pork sausage sarmie with red onions and cherry tomatoes

Preparation time: 10 min
Cooking time: 20 min


2 red onions – halved and finely sliced
1 tbs olive oil
8 quality pork sausages
2 tbs balsamic vinegar
1 tsp light brown soft sugar
½ tsp fresh thyme leaves
120 g cherry tomatoes – halved
4 white rolls

Servings: 4


Fry the onions in the oil for about 15 minutes until soft, stirring from time to time.

While the onions are cooking, place the sausages under the grill and cook for 12 minutes, turning a couple of times.

When the onions are soft, add the vinegar, sugar, thyme and some black pepper and stir for 2 minutes. Add the tomatoes and cook until warmed through.

Halve the rolls and toast lightly on the cut side.

Fill the rolls with the onions, tomatoes and sausages. Serve straight away.
